Kitchen time..

Today I quit work eariler than I had planned but it was a good thing.  I finally got the Heavenly Chocolate Pie made that I meant to make a week ago.  The meringue is optional but I like a little sweetness on top of the chocolate.  Here was the finished pie:

I am eating a piece right now. Yum!

I also ate stir fry again that I did in what else, my cast iron! :)   I added some peanuts to add a little protein.

It was good!

I asked hubby if he minded watching the Oscar's tonight.  He reluctantly agreed. There really isn't a whole lot on other than the same American Pickers shows that are okay...but I'd rather critique what everyone's wearing or saying...I mean.. I want to see who wins! :)

Probably will be more in the mood tomorrow. Nite

Oh well

As much as I say I never will work late on Friday, I did. Well I have a hair appointment tomorrow, and am getting it colored so I won't get as much time to work as I normally would on a Saturday.  I feel good about getting more done tonight so that I don't feel pressured over the weekend. Nobody puts the pressure on but me on the weekends.  :-)

And this hair appointment is long overdue since I missed my previously scheduled at least 3 weeks ago. Good thing I am growing it out because I can just stick it in a pony tail when it looks horrid some days.

I enjoyed some Hummus dip & chips and some 3 bean salad today for lunch.  I know I'll probably be farting all night long now.  But it was really good!  Sometimes it is nice changing it up from my yogurt and nuts. Sometime I should go out for lunch with hubby too. I just only take 30 minute lunches so I don't think about taking a nice leisurely one. Besides that would mean I'd have to work longer too to make up the time. Oh who am I kidding I always work the extra anyway. :)

Some may call me a work-a-holic but I do enjoy my time when I don't work!! Honest!  It is just that I have goals.  Sometimes in my line of work it is feast or famine and I also realize that I am not getting any younger and if I want to retire in say 12 years or so I will need to have some retirement funds to fall back on. It is too scary thinking that I'll have to rely totally on social security and who know how stable that will be by then.  Plus there is still more 'home improvement' in the plans.  So think what you may, I am just driven by my goals to get some things done in this 33 year old house and be able to have an option to retire with confidence. Enough about that, going to go sit with hubby for a bit.

Friday Eve'

Yes it is Friday eve'! I can get away with that can't I?  Makes it feel that much closer!

Ever have one of those days when work seems to be flowing along and you feel like you are getting a lot accomplished, then suddenly a difficult challenge happens, takes up a few hours plus and all of a sudden the day goes to h**l.  That was the kind of day I had today. Oh well. Yesterday was very productive so it was predictable that today would not be.  I cut my losses and quit working a bit earlier than I originally planned this morning.

My hubby took my dad to the urologist today.  He got some meds that hopefully will get his restroom functions going normally again.

I did a little singing while working today.  I really need to sing every day so that one day I don't wake up and realize that my voice is gone.  I still hope to do something with it someday.  Ho hum...someday...

Made a great stir fry dinner this evening from my Greenling order: broccoli rabe, onion, spinach, minced garlic, potato, peanuts and topped with watercress.  Yummy!

Just about...

shut down my computer for the night but I remembered that I didn't blog today.  I am going to be headed over to my folks here in a few to help me dad (he needs to use a catheter to go to the bathroom). Hopefully that will be short lived. He is going to see a urologist tomorrow (finally) to see about his problem.  Hopeful for him to get full function again of his bladder, etc.

I worked a long day today but felt okay doing it for once.  I think my tiredness is finally over now that I am on an easier schedule helping my dad out.  The weather keeps bouncing up and down though. In the morning it is at or near freezing and then by the afternoon it gets in the low/mid 60's.

I'm going to keep this short as there really isn't much new to blog about today. Oh I did get my Greenling order today so I am going to have some local veggies tomorrow with dinner!  Yum!

Today...

I am done work already!  Woo hoo!  I stopped at regular time today since I worked all weekend and the holiday. I felt I deserved to not work late tonight for once.

This afternoon I went over to help my dad and my mom asked me to look at the washer. I opened the lid and saw clothes and something that looked like a thin towel but also a bunch of white lint sort of stuff. I pulled out the strange looking towel and realized it was paper and it was heavy (with water weight)!  You know those hospital bed pads that they put down to catch 'accidents'?  Those blue and white square ones?  Well my dad had accidentally put it in the wash!  I saw that he had taken it off the bed as he hasn't had any issues there since getting home from the hospital.  But I never thought it would end up in the washer.

Oye!  I took out the load and walked outside with it, leaving a small trail of white paper lint behind me. I tried to fluff out as much of the white stuff that I could.  It was like snowing paper!  I got some in my clothes and hair, and I hope I didn't inhale any of the little white pieces of shredded pad.

The load then went into the dryer.  I hope it all came out.  I didn't stick around to find out.  I had to wipe out the washer with damp paper towels three times to get the white stuff from there too. Hopefully nothing got clogged up in the inside of the washer.

The things old people do!  LOL!  I know I'll be there someday but it always seems to be something.

Frigid February?!

To all my family and friends back east, especially in the New England area, stay inside and stay warm and safe!  Just so you won't feel totally jealous of my weather here in Texas it didn't get above the 30's today so it wasn't warm and sunny and in the 70's or anything like that.

I keep forgetting to post a spinach salad that I had last week that was really good. I added some potato salad (okay, store bought)..to the side and added some cheese and croutons. It was very good!  I'm going to get some more vegetables tomorrow as I have not been eating as many as I'd like.  I'm ordering again through Greenling. They have a tofu noodle salad that looks interesting too. I hope the tofu isn't mushy!

My dad is getting a bit stronger every day. He still cannot go to the bathroom on his own though (#1) but hopefully his body will remember how. In the meantime my sister and I keep helping out and we're also getting some home care to help out with chores and some meals.  Although when I went over there at 6:00PM to help my dad, he was making dinner!  That is a great sign!  Hope he'll be all better within a few weeks!

Off to go see what is on the TV and spend some time with hubby.
